Day trips: Goldens Bar -Bq, Fort Worth: Cowtown Barbecue Joint keeps Texas tradition – pillars on life

Golden's Bar-BQ in Fort Worth is the Texas grill of the old school, although it has barely 4 years old. This is the type of place where famous smoke meat became famous in the Lone Star State.

Due to circumstances that go beyond my control, I drove to the dirt parking lot an hour before the time was closed on a cold and damp Sunday afternoon. The usual line from the front door had dissolved.

Not unexpected, so close to the “sold -out” time, everything they left was turkey and chopped beef. The pleasant young man in the butcher block said that they always try to hack at least the beef until 3 p.m.

Golden's chopped beef is not a consolation price. It is slim with a balanced taste. This is not a stew made of barbecue sauce and pieces. The stack of beef food had just enough sauce to give a spicy sharpness without overwhelming the essences of the taste.

The side dishes were also not a subsequent thought. Homemade white bread with light sweetness improves every meal. The mustard-based potato salad is excellent with large pieces made of red onions and vegetables. The kitschy grits were smooth and spicy. The trip is only worth it for the warm bread pudding, which is only available on Sunday.

It is encouraging that a new generation of Pitmasters continues the heritage of Texas Barbecue. I want a grill joint, not a barbecue restaurant. Goldens is the real business, an honest barbecue joint.
