People spoke to chef Shane Schably, Senior Vice President of Culinary Strategy in First Watch Cafe, to learn more about this visually appealing taste, and why it has become such a staple in the many national locations in the restaurant.
“Lavender is currently super trendy and it's perfect for spring,” Schably says to the people. “But that's not our first time when we serve it. We used lavender for the first time in our purple FunstSuk – a lavender lemonade – as a seasonal menu item in 2021, and their immediate success confirmed its potential. ”

“We made Purple Dunst a full-time menu item in 2022, and shortly afterwards we knew that we had to say it when our spiked lavender lemonade was born,” continues Schably.
Lavender-inspired menu items do not adhere to drinks. Schaiblaut says that the first café also serves an incredibly popular – and instagratable – French toast with a “lively lavender whip”. He explains that the secret of the intense color of the court is blue-colored butterfly floral floral tea, from which he realizes that it is also an “emerging star” in the craft cocktail scene.
“We wanted a dish that was visually breathtaking, but also delicious, so we paired it with fresh berries and our characteristic Berry Compote,” he adds.

Schailum – who determines that the first clock turns the menu five times a year to emphasize the freshest ingredients of the season, says that the chain in the menu development phase in menu development usually tests more than a dozen dishes per day. However, he says: “We knew that we had something special for our customers” as soon as the Wilde Lavendel -French -Toast reached the table.
“Everyone packed their phones to take a photo,” he recalls.
